Flapjacks

I have been cooking at The Barna Way in North Kerry for the Creative Ireland funded project Brilliant Ballybunion. I have made flapjacks for numerous events and so I finally feel like I have the recipe down. And here it is written down - with some optional extras if you’re feeling it.

Ingredients:

300g oats

100g flour

160g brown sugar

200g butter

1tsp cinnamon

1tsp vanilla extract

Zest 1/2 orange

1 tbsp of honey

(optional extras: 2 tsp tahini and/or a handful of chopped dates)

Method:

Preheat the oven to 180°C.

Line a baking tray with greased parchment paper.

In a mixing bowl combine the dry ingredients.

In a saucepan melt the butter and then add and mix through the vanilla extract and orange zest. Pour the melted butter into the bowl and mix well.

Spread out onto the tray and press down lightly with the back of a fork.

Bake for 10 mins. Remove from the oven and cut out the squares while still soft (much easier now than later!).

Place back in the oven to bake for a further 15 mins. You want them golden on top but still slightly soft and chewy in the middle.
